Sunflower Seed Milk

It's so much easier than you think to make your own delicious plant-based milks! This version uses sunflower seeds, feel free to replace with other seeds or nuts such as pumpkin seeds, hemp seeds, almonds, or cashews. Enjoy warmed or chilled on its own as a refreshing beverage and as the base of a smoothie or poured over your breakfast cereal. Store in a glass jar in the refrigerator and use within 4-5 days. Shake well before serving.

Ingredients

-1 cup sunflower seeds
-3 cups water
-4-6 dates, pitted, or sweetener of choice, optional
-¼ teaspoon ground cinnamon
-⅛ teaspoon ground nutmeg or cardamom
-Pinch sea salt

Directions

1. Place sunflower seeds in a bowl with ample water to cover. Allow to sit for 30 minutes, up to overnight. Rinse and drain well and discard the soak water.

2. Transfer to a strong blender with 1 ½ cups of the water and all of the remaining ingredients, and blend until creamy. Add the remaining 1 ½ cups of water and blend until creamy. (If you add all of the water at once, it will be harder to blend).
