Vegan Ceviche

Traditionally made with raw fish, our version uses hearts of palm as the main ingredient. If you wish for more of the flavor of the sea, you can add 1 sheet of nori (used in sushi rolls) crumbled along with the other ingredients. Serve this zesty salad along with chips, on tortillas, or on top of roasted or grilled tofu.

Ingredients

14-ounce can hearts of palm, ½ inch slices (1 ¼ cups)
½ cup cucumber, peeled, seeded and chopped
2 tablespoons lime juice
1 ½ tablespoons red onion, minced
1 tablespoon cilantro, finely chopped
1 tablespoon red chile pepper or ¼ cup red bell pepper, seeded and diced
1 tablespoon olives, minced, optional
¼ teaspoon lime zest
Sea salt and ground black pepper to taste

1. Combine all ingredients in a bowl and mix well. Allow to chill for 10 minutes before serving.
