Ingredients
14-ounce can hearts of palm, ½ inch slices (1 ¼ cups)
½ cup cucumber, peeled, seeded and chopped
2 tablespoons lime juice
1 ½ tablespoons red onion, minced
1 tablespoon cilantro, finely chopped
1 tablespoon red chile pepper or ¼ cup red bell pepper, seeded and diced
1 tablespoon olives, minced, optional
¼ teaspoon lime zest
Sea salt and ground black pepper to taste
1. Combine all ingredients in a bowl and mix well. Allow to chill for 10 minutes before serving.
